Serves 2 people
Ingredients:
3 large tomatoes
2 jalapenos (or 1 if you like mild salsa)
salt to taste
2 tsp oil
6 eggs
tortillas
sprig of cilantro
Salsa:
- Boil the tomatoes and jalapenos
- Once tender, remove then from the boiling water and set aside to cool
- Once cool, peel the skin off the tomatoes and jalapenos
- Core the tomatoes and remove the jalapeno stems
- add tomatoes, jalapenos, and salt to a food processor and blend
In a skillet, heat oil until hot.
Add eggs ,cook and stir over medium-low heat until eggs are completely set. Season with salt.
Add salsa mixture to eggs. Garnish with chopped cilantro. Heat tortillas. Enjoy!
