Huevos Con Chile Recipe

Huevos con chile is scrambled eggs in salsa.  It is very good!  It is also easy to make. Plus once you know how to make salsa, you will find yourself making it all the time!



Serves 2 people

Ingredients:
3 large tomatoes
2 jalapenos (or 1 if you like mild salsa)
salt to taste
2 tsp oil
6 eggs
tortillas
sprig of cilantro

Salsa:
  • Boil the tomatoes and jalapenos
  • Once tender, remove then from the boiling water and set aside to cool
  • Once cool, peel the skin off the tomatoes and jalapenos
  • Core the tomatoes and remove the jalapeno stems
  • add tomatoes, jalapenos, and salt to a food processor and blend 

In a skillet, heat oil until hot.
Add eggs ,cook and stir over medium-low heat until eggs are completely set. Season with salt. 
Add salsa mixture to eggs. Garnish with chopped cilantro. Heat tortillas. Enjoy!
